Encara que sigui ecol\u00f2gic o integral, el blat modern \u00e9s <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">massa h\u00edbrid<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> . Cont\u00e9 una elevada quantitat de glutamina, una <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">prote\u00efna que tendeix a irritar les parets intestinals i molts menys minerals i vitamines<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> que fa centenars d&#8217;anys.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">\u00c9s una veritable ll\u00e0stima, perqu\u00e8 el blat <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">era realment un aliment adequat<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> i avui dia s&#8217;utilitza en multitud de farines i aliments, especialment com a espessidor.<\/span><\/span><\/p>\n<p><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">2.-Massa pobre en fibra, vitamines i minerals<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Al pa blanc, la millor part de la farina s&#8217;ha retirat per donar-la als porcs ia altres animals de granja. El <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">blat integral no \u00e9s bo per a la salut, per\u00f2 almenys cont\u00e9 fibra, vitamines i minerals<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> . Per elaborar pa blanc, per contra, <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">es retiren<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> del blat <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">el germen i el seg\u00f3.<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">El resultat \u00e9s un producte gaireb\u00e9 sense fibra i gaireb\u00e9 sense vitamines ni minerals, un producte que en el fons no \u00e9s m\u00e9s que mid\u00f3; senzillament <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">calories sense nutrients essencials.<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">El mateix passa amb els cereals per esmorzar. Quan compri cereals no es deixi impressionar per les etiquetes que indiquen que han estat \u201cenriquits\u201d amb vitamines. La ra\u00f3 per la qual de vegades s'&#8221;enriqueixen&#8221; els cereals \u00e9s precisament perqu\u00e8 els cient\u00edfics es van adonar de fins a quin punt eren pobres en nutrients. Vaja, que la <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">caixa de cartr\u00f3<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> dels cereals cont\u00e9 gaireb\u00e9 tants micronutrients com els mateixos cereals, si no m\u00e9s.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Els fabricants van afegir llavors 3 o 4 vitamines i una mica de ferro. Per\u00f2 aix\u00f2 \u00e9s com si alg\u00fa li rob\u00e9s 10.000 euros del compte del banc i despr\u00e9s decid\u00eds &#8220;enriquir-lo&#8221; donant-li un parell d&#8217;euros.<\/span><\/span><\/p>\n<p><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">3.-Massa salat<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">El pa blanc modern est\u00e0 massa salat. Cont\u00e9 de mitjana 19 g de sal per quilo de pa. Una barra (250 grams) cont\u00e9 4,7 g de sal, fet que suposa <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">gaireb\u00e9 la quantitat m\u00e0xima di\u00e0ria que recomana ingerir l&#8217;OMS (5 g\/dia\/persona).<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> Segons dades recollides per l&#8217;Ag\u00e8ncia Espanyola de Seguretat Aliment\u00e0ria i Nutrici\u00f3 (AESAN), a Espanya la principal font diet\u00e8tica de sodi a la poblaci\u00f3 adulta \u00e9s precisament el pa.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Encara que no s&#8217;afegeixi sal a la seva fabricaci\u00f3, el pa sense sal cont\u00e9 no obstant aix\u00f2 de 0,2 a 2,2 g de clorur de sodi per quilo.<\/span><\/span><\/p>\n<p><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">4.-Massa dol\u00e7<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">El pa blanc no \u00e9s un sucre lent, \u00e9s m\u00e9s aviat un sucre de combusti\u00f3 r\u00e0pida amb un \u00edndex gluc\u00e8mic elevat, que <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">provoca un gran desgast d&#8217;insulina i reaccions d&#8217;hipogluc\u00e8mia.<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">L&#8217;\u00edndex gluc\u00e8mic indica l&#8217;efecte dels aliments a la gluc\u00e8mia (nivell de glucosa a la sang) durant les dues hores seg\u00fcents a la seva ingesta.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">L&#8217;\u00edndex 100 de gluc\u00e8mia (el m\u00e0xim) correspon a la glucosa pura i&#8230; al pa blanc!, que no \u00e9s m\u00e9s que mid\u00f3, com ja ha vist, i el mid\u00f3 no \u00e9s m\u00e9s que una cadena de mol\u00e8cules de glucosa.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Aix\u00f2 vol dir que consumir pa blanc <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">\u00e9s pitjor que menjar terrossos de sucre:<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> fa que augmentin escandalosament els nivells de sucre a la sang, cosa que <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">afecta el p\u00e0ncrees i provoca un bec d&#8217;insulina<\/span><\/span><\/strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\"> , amb el conseg\u00fcent <\/span><\/span><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">risc de desenvolupar en un futur resist\u00e8ncia a la insulina, diabetis, obesitat i malalties cardiovasculars.<\/span><\/span><\/strong><\/p>\n<p><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">5.-Massa gluten<\/span><\/span><\/strong><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">El blat modern, resultat de processos h\u00edbrids, ha estat seleccionat per la seva riquesa en gluten. El gluten \u00e9s una barreja de prote\u00efnes.
