Cada cop m\u00e9s, es posen en marxa instal\u00b7lacions industrials que sobre el paper respecten els criteris de la producci\u00f3 ecol\u00f2gica, produint ous per milions.<\/span><\/span><\/li>\n<\/ul>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Continuem estant molt lluny de la crian\u00e7a tradicional de les gallines, que \u00e9s l&#8217;\u00fanica que pot garantir l&#8217;aut\u00e8ntic ou que menjaven els nostres avis, reconeixible entre mil al plat. El 1950, a Espanya hi havia milers i milers de granges en actiu. A cadascuna hi havia un galliner, amb algunes dotzenes de gallines que sovint podien passejar-se pels voltants lliurement. Tots els ous que es consumien es produ\u00efen aix\u00ed.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Perqu\u00e8 aquesta \u00e9s l\u00fanica manera correcta de produir ous. Gr\u00e0cies al bon sistema immunitari, no s&#8217;infectaran de salmonel\u00b7la. Com m\u00e9s frescos siguin els ous, m\u00e9s viscosa ser\u00e0 la clara.<\/span><\/span><\/p>\n<h5><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">2. <\/span><\/span><\/strong> <span style=\"text-decoration: underline;\"><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">LA MILLOR MANERA DE MENJAR OUS<\/span><\/span><\/strong><\/span><\/h5>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Ara que vost\u00e8 ha comprat ous de deb\u00f2, com els ha de preparar perqu\u00e8 conservin totes les seves virtuts nutritives?<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">El pitjor que pot fer \u00e9s coure&#8217;ls a massa temperatura i massa temps, fins al punt que adquireixin una consist\u00e8ncia gomosa si es couen massa. Quan la xocolata fosa s&#8217;hagi refredat una mica, barregeu-ho amb els rovells. Afegiu a continuaci\u00f3 a aquesta barreja les clares a punt de neu, amb suavitat per no trencar-les. Aboqui la barreja en cassoletes individuals que deixar\u00e0 una nit al frigor\u00edfic. Pot afegir, \u00e9s clar, fruits secs, per\u00f2 no cal ni sucre, ni farina, ni mantega.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Per contra, les autoritats us aconsellaran coure b\u00e9 els ous per evitar la salmonel\u00b7losi. Per\u00f2 aquest risc afecta sobretot les gallines criades en males condicions i, fins i tot en aquest cas, nom\u00e9s un ou de cada 30.000 est\u00e0 contaminat.<\/span><\/span><\/p>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">No hi ha res que justifiqui privar-lo dels avantatges nutricionals dels ous crus.<\/span><\/span><\/p>\n<h5><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">3. <\/span><\/span><\/strong> <span style=\"text-decoration: underline;\"><strong><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">SI A PESAR DE TOT DECIDEIX COure ELS OUS<\/span><\/span><\/strong><\/span><\/h5>\n<p><span style=\"vertical-align: inherit;\"><span style=\"vertical-align: inherit;\">Si no podeu evitar coure els ous, la millor manera de prendre&#8217;ls \u00e9s passats per aigua, \u00e9s a dir, cuits a baixa temperatura (80\u00b0 C).
